Weekly menu consists of:
Breakfast:
- Sun-Thurs: Breakfast Green Smoothie
- Fri: Cereal w/ milk
- Sat: Egg, cheese, sausage, and salsa scramble (protein fest!! lol)
Lunch:
- Mon-Fri: Frozen Entree (no pasta nor bread type filler; rice is ok)
- Sat-Sun: Generally we only eat two meals on the weekends, a late breakfast and an early dinner, so no ‘lunch’ on the weekends.
Dinner (3-4pm) (approximate; quality of vegetables may cause days to switch):
- Sun: Alfredo Sauce, Sausage, BroCauli Rice; Optional Salad
- Mon: Roast Beef, Potatoes, Vegetable mix; Optional Salad
- Tue: Grilled Chicken, 2 different vegetables or mixes; Optional Salad (note: this is kind of left over vegie day)
- Wed: Spaghetti Sauce, Sausage (the other half of Sunday’s), Zoodles (zucchini noodles); Optional Salad
- Thu: Roast Beef (the other half of Monday’s), whatever vegies need to be eaten soon; Optional Salad
- Fri: Take Out Night (DQ, Arby’s, Subway, Pizza, or Whatever…no, not all at once :P )
- Sat: Chips ‘n’ Dip: Chips = sunchips, baked lays, or fritos; Dip = beans, cheese, and/or salsa; Optional Salad
Evening Mini-Meal if desired (before 7pm):
- Choice of large bowl of fruit, cottage cheese, yogurt, attempted “ice cream mix” (fruit, milk, ice, blended), etc. (Enough to get the munchies taken care of without heaviness nor difficult digestion.)
Note: Salad is optional because we get leaves in the smoothies, and plenty of vegies during most of the week. Also, by keeping it optional, there’s no feeling of being forced to eat it, thus making it more enjoyable, especially with a really good dressing on it. Surprisingly, my daughter opts for a salad about 4 out of 7 days. Oh, and we grow our own lettuce…lots of lettuce plants!! :D
This has been our basic menu for most of the month of July. I intend to keep it going this month, making it habitual, while I work out what my next step is going to be. (probably homemade dressings or sauces)

The last week of August turned into cereal and milk for breakfast. Much time and energy was spent trying to get manta ready for school. While in town shopping and such, we ate in town, which of course wasn’t good choices by us.
I got really sick and then was having some major back problems. Between the two, I just didn’t care what we ate, and didn’t have the speaking ability to tell anyone else how to do the smoothies. Richard became in charge of food choices for dinners. We ate frozen meals (warmed up in microwave obviously). And frozen lunches (hot pockets).
Because I wasn’t picking the lettuce (nor watering plants), and because of the heat wave we had, our lettuce plants all bolted. So that’s cut out salads for now.
On the plus side, I didn’t gain too much weight and it’s been coming off easily. (water, i know).
I hadn’t figured out the homemade dressings and sauces, yet.
I’m getting frustrated because it seems that even when I set small goals for myself, I don’t seem to follow through. Honestly, I wish I didn’t have to set goals. I don’t like setting goals and I don’t like trying to aim for a goal. If it was just me, I wouldn’t be setting the goals at all, and just go moment by moment making decisions based on principles. But with trying to care for my family, and the stresses involved, I just don’t have that kind of freedom I need. So I try to make up for it by setting goals, and then get frustrated by trying to meet them..and failing.
On the plus side, I WILL eventually figure it out. Of course, by then manta might be away from home. But hey, I’ll have figured it out, lol.
